Chocolate Carrot Slice

Saja C&P sebab senang nnt nak cuba buat just bkk blog sendiri je. Agak2 senang ke? Takut nak mencuba sorang, Watee tunggu kalau Yong (my luvly cousin) dtg bila2 ble wat projek bersama.


Ingredients:

1 cup self-raising flour
1 teaspn ground cinnamon ( I used mixed spices)
3/4 cup caster sugar (I used 1/2 cup brown sugar)
1/2 cup finely grated carrot
1 cup mixed dried fruit
1/2 cup choc chips(I used mix of choc chips & choc rice)
1/3 cup desiccated coconut
2 eggs, lightly beaten
90g unsalted butter, melted
Method:
1. Pre-heat oven to moderate 180deg cel. Brush a shallow 21cm square cake tin with butter and line the base and sides with baking paper.
2. Sift flour and ground mixed spices into a big bowl. Add sugar, carrot, mixed fruit, choc bits and coconut and stir until just combined.
3. Add beaten eggs and melted butter. Stir until mixture is just combined.
4. Spread mixture evenly into prepared tin and smooth surface. Bake for 30 mins or until golden brown. Cool in tin, then turn out.
To make cream cheese frosting:
Ingredients:
125gm cream cheese
30g ulsalted butter
1 1/2 cup icing sugar, sifted
1 teaspn hot water
1/3 cup chopped walnut, to sprinkle
Method:
1. Using electric beaters, beat cream cheese and butter until smooth.
2. Add icing sugar and beat for 2 mins or until mixture light and fluffy.
3. Add water, beat until combined.
4. Spread slice with frosting using a flat-bladed knife and sprinkle with some chopped walnut. Chill for a while for easy slicing. Slice and serve.
